Detox Slaw

Sometimes it is essential to push the reset button on our habits and daily activities. One important thing that comes to mind is detoxing both mentally and physically. It should be a priority to practice mindful awareness, to be present in the beauty of each moment and to take good care of our bodies that sustain us every single day. Here is a simple recipe for detox slaw that is a painless way to start thinking about building healthy, nutritious meals.

Detox Slaw

EQUIPMENT: Grater, cutting board, chef knife, mason jar with lid, large bowl, salad tongs.

DRESSING INGREDIENTS

  • 2 tsp (10 mL) dijon mustard
  • 1 tsp (5 mL) onion powder
  • 1/4 tsp (1.25 mL) salt
  • 1/2 tbsp (7.5 mL) poppy seeds
  • 1 tbsp (15 mL) white vinegar
  • 1 tbsp (15 mL) olive oil
  • 1/4 cup (60 mL) orange juice, fresh squeezed

SALAD INGREDIENTS

  • 1 cup (250 mL) red cabbage, thinly shredded
  • 1 cup (250 mL) green cabbage, thinly shredded
  • 1 cup (250 mL) carrots, grated
  • 1 cup (250 mL) apple, cored and thinly sliced
  • 1/4 cup (60 mL) walnuts, toasted and crushed
  • 1 sprig cilantro, fresh, leaves only

DIRECTIONS

1. In a mason jar, combine all dressing ingredients. Securely fasten lid and shake vigorously until dressing has emulsified and looks smooth. Set aside in fridge.

2.In a large bowl, combine red cabbage, green cabbage, carrots, apple and walnuts. Pour dressing on top. Using clean hands or tongs, toss to mix well and garnish with cilantro leaves.

3. Enjoy as a side dish or as a main!

NOTE: For an allergy free option, replace walnuts with any of the following textural garnishes: pomegranate seeds, pumpkin seeds, dried cranberries, raisins, or sunflower seeds.
